As far as doubling the recipe, works great for me, just have to increase the temp to 425 to start, first 10 minutes, then drop to 325 for the remainder. Higher start temp gives it the jump you need, lower temp after gives it the ability to bake without burning. Milled flax seeds add a slight bit of unnecessary oils, not much, but oils work best with normal flour. Try whole flax seed on top instead. I have been making this bread alot lately with no issues, I hope no one gets shys away from this recipe because of poor results, just keep trying. You will be glad you did. 

Hi! I live in Europe but I’m a Sabahan who goes home every year for a couple of months for Chinese New Year. So I started keto about 2.5 months ago for weight loss and the result is pretty good. But since I’m on a Keto way of eating, I had to find an alternative. The filling is perfectly fine and I did not have to use any substitutes. The dough however, was my problem. Few days ago, I found a Keto empanada recipe and it took me back to my trip to Spain last summer and I had 2 empanadas and that reminded me of karipap. So after some research, I decided to use a Keto empanada dough recipe but fill it with dry mince meat curry to make Malaysian karipap. I was a little hesitant because using a cheese dough recipe for karipap as it seemed like an abomination to karipap, but after I had my first bite I can safely say, IT’S DAMN DELICIOUS! You can’t even tell that it was made from cheese!

This is without a doubt the best keto bread I have tried to date. The taste and texture are spot on! I did add half a tsp of cinnamon and about 5 drops of stevia because I’m making this to replace homemade whole wheat cinnamon raisin bread. Reader beware this bread is dangerously good! I definitely need a smaller loaf pan to get a more square sandwich bread shape, the 9×5 made a flat thin loaf.

I wish I could prepare this recipe for my beloved mum next Sunday (I can imagine she won’t even notice that it’s a low carb recipe! She’s always so skeptical to these kind of recipes), and share a cinnamon roll with her, but unfortunately I struggle with dairy. I’d think to substitute butter with ghee (the only dairy product I consume without problems), cream cheese with coconut cream (adapting the amount, should be enough reducing 1/3), but what about mozzarella? I’m sorry, but I did not weigh the bread so I cannot give you the nutrition per 100 g. There’s a good (free) nutrition calculator on the website sparkrecipes.com that you can use. Or download the KetoDietApp, it also has a good one. Glad you like the bread though!

I’ve made countless baked goods using almond flour and the main problem I’ve encountered is how dense the finished product is. The fluffy egg whites in unison with the high dosage of baking powder do a good job of getting this loaf nice and fluffy and adding some air pockets into the loaf. I do not understand why recipes always call for a specific low carb sweetener – unless it is because whoever posted the recipe gets a commission if you buy the product they recommend.
