The texture of this pound cake is very dense and rich. I don’t doubt that you’d be able to easily fool someone who is not following a keto diet plan. It tastes just like a flour based pound cake. It’s sweet enough without being overly sweet. If you want to add some more sweetness to the loaf, I’d suggest a very small amount of stevia instead of adding more erythritol.
I wish I could prepare this recipe for my beloved mum next Sunday (I can imagine she won’t even notice that it’s a low carb recipe! She’s always so skeptical to these kind of recipes), and share a cinnamon roll with her, but unfortunately I struggle with dairy. I’d think to substitute butter with ghee (the only dairy product I consume without problems), cream cheese with coconut cream (adapting the amount, should be enough reducing 1/3), but what about mozzarella? Any suggestion? (No cashews please.) Thank you in advance if you can help me. Your blog is always a wonderful source of inspiration 🙂
Anyway, I’ve been on keto for two weeks now. I cheat here and there because of Raya while making sure my majority intake is fat. I’m experiencing stomach discomfort nowadays and weird stool (oops). My digestion was fine on the first week but towards the end of the day I felt quite dizzy to drive home. Totally fine now with lotsa energy. Except for the toilet part. 

How much weight can you lose intermittent fasting for 3 months


I have not tried this yet. It could work, if you baked it for longer. The only thing I’m worried is that it might not rise as much because of the extra weight. I might be wrong, but I don’t want you to be upset about waisting expensive ingredients. There’s someone who commented about doubling the recipe on october 25th 2018 – but it sounds that she might have used 2 pans instead … here’s the comment: “I just made this. I doubled the recipe and used long narrow Wilton pans. I used carton egg whites. I baked it for 45 minutes, turned the oven off and left it closed for 30 minutes. Awesome, awesome, awesome!!! I now have 21 slices of bread in the fridge to experiment with. (That means I already ate 3)”

This is without a doubt the best keto bread I have tried to date. The taste and texture are spot on! I did add half a tsp of cinnamon and about 5 drops of stevia because I’m making this to replace homemade whole wheat cinnamon raisin bread. Reader beware this bread is dangerously good! I definitely need a smaller loaf pan to get a more square sandwich bread shape, the 9×5 made a flat thin loaf.

I tend to get into deep ketosis on my third week of the month due to ramping up of exogenous ketones derived from MCT oils and other longer chain oils, and it’s not too good for my T3 and T4 markers so I usually get in a carb refeed on the last week of the month just so that I don’t stress my thyroid too much. Still, eventhough I do carb refeeds, they’re after heavy workouts and I only go for a maximum of 100g of carbs.

Beating the egg whites is the answer to the denseness that comes with making an almond flour bread. I’ve made countless baked goods using almond flour and the main problem I’ve encountered is how dense the finished product is. The fluffy egg whites in unison with the high dosage of baking powder do a good job of getting this loaf nice and fluffy and adding some air pockets into the loaf. This makes for a better tasting bread.

Hi Marcella, Not all recipes can use sweeteners interchangeably, though many can. I do talk about this in the sweetener guide you mentioned. The reason for specific sweeteners in recipes is mainly because I can only 100% vouch for the way I tested the recipe, with my specific ingredients. Sweeteners also provide bulk, so sometimes changing to a different one does change the result as well. In the case of these cinnamon rolls, though, there isn’t a lot of sweetener in the dough, so they do work fine with almost any sweetener you like.

Is there a topical cream for arthritis


For Jessica – You can use any of the sweeteners appropriate for keto recipes. (Xylitol has a higher glycemic index.) I do not understand why recipes always call for a specific low carb sweetener – unless it is because whoever posted the recipe gets a commission if you buy the product they recommend. As a matter of fact I have a conversion chart for Natural Low Carb Sweeteners that came from Wholesome Yum!
just to share with you that i normally buy my cheese, butter, almond flour, nuts…from bakery ingredients shops that are selling much more cheaper than retail shops and supermarket. eg. i get raw almond and almond flour around RM39-41/kg, walnut around the same price. mozzarella RM50+/2kg block, cheddar RM70+/2kg block, cooking cream RM5/pack, while coconut flour RM12+ at Aeon….while i travel in eastern Europe, i’ll buy MCT oil and coconut oil which is ridiculously cheaper than Malaysia, eg, pure MCT oil is selling RM30+/400ml while the one i found in KL is selling RM60+ 300ml and VCO is RM20+/1l while RM60+ in Malaysia. also, in Eastern Europe, animal fats are easily available and cheap, if you happened to travel here you can pack some home.
