Oh another think I thought I might mention. I use store bought coconut cream as a substitute to any recipe that calls for whipping/heavy cream. The ones from pasar are too liquid, doesn’t whip up. I do have to give generous amounts of garlic (or flavouring in case it’s a sweet dish) to get rid of the coconut taste/smell. But apart from that it works as good as heavy cream at half the price.
I have not tried this yet. It could work, if you baked it for longer. The only thing I’m worried is that it might not rise as much because of the extra weight. I might be wrong, but I don’t want you to be upset about waisting expensive ingredients. There’s someone who commented about doubling the recipe on october 25th 2018 – but it sounds that she might have used 2 pans instead … here’s the comment: “I just made this. I doubled the recipe and used long narrow Wilton pans. I used carton egg whites. I baked it for 45 minutes, turned the oven off and left it closed for 30 minutes. Awesome, awesome, awesome!!! I now have 21 slices of bread in the fridge to experiment with. (That means I already ate 3)”

I tend to get into deep ketosis on my third week of the month due to ramping up of exogenous ketones derived from MCT oils and other longer chain oils, and it’s not too good for my T3 and T4 markers so I usually get in a carb refeed on the last week of the month just so that I don’t stress my thyroid too much. Still, eventhough I do carb refeeds, they’re after heavy workouts and I only go for a maximum of 100g of carbs.
Omg! I was Christmas baking with my friend. I made keto rumballs and started my keto pumpkin pie crust while he whipped up this recipe. At first I was a bit skeptical: Mozzarella cheese? O M G! But since I’m on a Keto way of eating, I had to find an alternative. The filling is perfectly fine and I did not have to use any substitutes. The dough however, was my problem. Few days ago, I found a Keto empanada recipe and it took me back to my trip to Spain last summer and I had 2 empanadas and that reminded me of karipap. So after some research, I decided to use a Keto empanada dough recipe but fill it with dry mince meat curry to make Malaysian karipap. I was a little hesitant because using a cheese dough recipe for karipap as it seemed like an abomination to karipap, but after I had my first bite I can safely say, IT’S DAMN DELICIOUS! You can’t even tell that it was made from cheese!

just to share with you that i normally buy my cheese, butter, almond flour, nuts…from bakery ingredients shops that are selling much more cheaper than retail shops and supermarket. eg. i get raw almond and almond flour around RM39-41/kg, walnut around the same price. mozzarella RM50+/2kg block, cheddar RM70+/2kg block, cooking cream RM5/pack, while coconut flour RM12+ at Aeon….while i travel in eastern Europe, i’ll buy MCT oil and coconut oil which is ridiculously cheaper than Malaysia, eg, pure MCT oil is selling RM30+/400ml while the one i found in KL is selling RM60+ 300ml and VCO is RM20+/1l while RM60+ in Malaysia. also, in Eastern Europe, animal fats are easily available and cheap, if you happened to travel here you can pack some home.
