Hi Neha, my recipe uses baking powder and not baking soda. I think this is the reason why your bread had a funny taste. Baking soda is much stronger than baking powder (I think twice as strong). The xanthan gum helps improve the structure of the bread – almond flour bread is a little more fragile than wheat bread because of the lack in gluten. But your bread will still work without the xanthan.

Curry puffs or as we call it, Karipap is a comfort food for Malaysians. Well, any Malaysian food is comfort food to us. 🙂 Karipap is also known as epok-epok and is quite similar to Empanadas. Karipap is a dough stuffed with dry curried minced meat or sardines and then fried. Some add a quarter of a hard boiled egg in it. On a regular day, I would make Karipap using ready made puff pastry as I don’t have a good hand with dough ( I always over handle it). If you’re not a fan of baking but you’re a fan of eating bread, there are places to get keto friendly bread these days. If you’re lucky, you may be able to find a loaf of “Paleo Bread” in the freezer section at Whole Foods Market. This bread is going to cost you over $10 per loaf, but it is made of good ingredients and is a few grams of carbs per slice. There’s also rumors of ALDI carrying a new Zero-Carb bread, but it sells out fast and we haven’t been able to review it. Hopefully in the near future there will be more local buying options for low carb bread, but for now, those are your only options.
Oh another think I thought I might mention. I use store bought coconut cream as a substitute to any recipe that calls for whipping/heavy cream. The ones from pasar are too liquid, doesn’t whip up. I do have to give generous amounts of garlic (or flavouring in case it’s a sweet dish) to get rid of the coconut taste/smell. But apart from that it works as good as heavy cream at half the price.

Oh just about everything- ice cream, cheese cake (although had to give some heavy cream in this), cheese dip, chocolate-cheese mousse etc. I cook it with chicken and spinach too, but I was talking about non-traditional uses like the ones above. I’ve recently started using it with mayonnaise to give it a lighter consistency because my mayo seems to thicken too much. However, you cannot make VCO from the store bought cream, you would need fresh santan to do that.
Dear Darlene Hi,There are many keto bread recipes online,this one caught my attention owing to its promise of not smelling eggy. That claim holds true to a large extent. I used baking powder instead of xanthum gum but even then the texture was good .Overall a great recipe which I hope and continue to improve. However I am confused about the net carbs in the nutrition box. As per my understanding net carbs are total carbs – sugar – dietary fiber which in this case will not be logical. Can you pls advise the net carb per slice as per the recipe. Thanks a lot.

Hi Suraya…..stumble on yr site while surfing for healthy oils as i make my own oils namely coconut, peanut, sunflower and flaxseed….own consumption and selling to close relatives and friends. Since my husband’s episode of ” heart attack” few years ago, i’ve started realizing that our staple diet among malaysians are full of sugars, fast food and carbs. The more i research the more I’ve come to realize that the main ingredients are so full of preservatives, colorings and additives….This keto diet that i’ve come across so frequently nowdays has made me thinking of trying it but with the mentality especially for asians….rice and flour is a must have on our dinner tables including my husband….i can only wonder.
