Dear Darlene Hi,There are many keto bread recipes online,this one caught my attention owing to its promise of not smelling eggy. That claim holds true to a large extent. I used baking powder instead of xanthum gum but even then the texture was good .Overall a great recipe which I hope and continue to improve. However I am confused about the net carbs in the nutrition box. As per my understanding net carbs are total carbs – sugar – dietary fiber which in this case will not be logical. Can you pls advise the net carb per slice as per the recipe. Thanks a lot.

Generally, I have found that it is possible to leave out xanthan gum in recipes. It will make the end result a little more brittle/less sturdy. Xanthan holds things together, which helps when you’re baking without gluten. So, you may not be able to slice super thin slices. And you should definitely not even think about touching you bread while it’s still warm. If you have chia seeds, you could consider replacing the xanthan with chia which you have ground into a fine powder.

Hi Maya! So I have my very picky 8 year old granddaughter over and she wanted breakfast. Of course I’m doing keto, so no cereal or sweets in my house. There was no better time than today for me to try making these cinnamon rolls and little Miss picky not only enjoyed helping to make them, but ate one and loved it! As did my hubby and of course… Me. There only thing I did different was I put the dough in the freezer vs. fridge to speed up the coolng time (she was starving). They were amazing girl! Hi Neha, my recipe uses baking powder and not baking soda. I think this is the reason why your bread had a funny taste. Baking soda is much stronger than baking powder (I think twice as strong). The xanthan gum helps improve the structure of the bread – almond flour bread is a little more fragile than wheat bread because of the lack in gluten. But your bread will still work without the xanthan.

just to share with you that i normally buy my cheese, butter, almond flour, nuts…from bakery ingredients shops that are selling much more cheaper than retail shops and supermarket. eg. i get raw almond and almond flour around RM39-41/kg, walnut around the same price. mozzarella RM50+/2kg block, cheddar RM70+/2kg block, cooking cream RM5/pack, while coconut flour RM12+ at Aeon….while i travel in eastern Europe, i’ll buy MCT oil and coconut oil which is ridiculously cheaper than Malaysia, eg, pure MCT oil is selling RM30+/400ml while the one i found in KL is selling RM60+ 300ml and VCO is RM20+/1l while RM60+ in Malaysia. also, in Eastern Europe, animal fats are easily available and cheap, if you happened to travel here you can pack some home.
