This is without a doubt the best keto bread I have tried to date. The taste and texture are spot on! I did add half a tsp of cinnamon and about 5 drops of stevia because I’m making this to replace homemade whole wheat cinnamon raisin bread. Reader beware this bread is dangerously good! I definitely need a smaller loaf pan to get a more square sandwich bread shape, the 9×5 made a flat thin loaf.

This recipe is perfect. I did half a batch and made six rolls. I used the correct amount of almond flour simply because I didn’t have the nuts in my pantry. These rolls are perfect and moist. I also added some pieces of chopped apple as a treat because it’s apple season and my goal was low carb not Keto. I’m so happy I found this recipe. With winter coming this will be a great treat.

Oh another think I thought I might mention. I use store bought coconut cream as a substitute to any recipe that calls for whipping/heavy cream. The ones from pasar are too liquid, doesn’t whip up. I do have to give generous amounts of garlic (or flavouring in case it’s a sweet dish) to get rid of the coconut taste/smell. But apart from that it works as good as heavy cream at half the price. 

Hi Neha, my recipe uses baking powder and not baking soda. I think this is the reason why your bread had a funny taste. Baking soda is much stronger than baking powder (I think twice as strong). The xanthan gum helps improve the structure of the bread – almond flour bread is a little more fragile than wheat bread because of the lack in gluten. But your bread will still work without the xanthan.
