Hi, I just made this bread. Inwas incredibly excited to try it as sometimes I really crave for a slice of bread. I followed all recipe and when I inserted the tooth pick it came as clean as possible. I left it in the over a few kore mins just in case. But I now tried to cut a slife and noticed it is quite moist and there is a bit of water at the bottom of the pan. It does look cooked though and hast toasted a slice and tasted lovely. Did I do anything wrong.???

The texture of this pound cake is very dense and rich. I don’t doubt that you’d be able to easily fool someone who is not following a keto diet plan. It tastes just like a flour based pound cake. It’s sweet enough without being overly sweet. If you want to add some more sweetness to the loaf, I’d suggest a very small amount of stevia instead of adding more erythritol.

Hi Neha, my recipe uses baking powder and not baking soda. I think this is the reason why your bread had a funny taste. Baking soda is much stronger than baking powder (I think twice as strong). The xanthan gum helps improve the structure of the bread – almond flour bread is a little more fragile than wheat bread because of the lack in gluten. But your bread will still work without the xanthan.

There’s also rumors of ALDI carrying a new Zero-Carb bread, but it sells out fast and we haven’t been able to review it. Hopefully in the near future there will be more local buying options for low carb bread, but for now, those are your only options.

Signature Market is a good online store to shop too (they are giving 3 months free membership + high discount). For avocado, I find that Jaya Grocer sells at pretty good deal (3 in 1 pack for rm12.90, the one at Intermark). I am just wondering where can I get cheaper salmon, the one I bought at morning market sri rampai costed me rm19 for just one slice! Btw, I am going to try making cauliflower chicken rice and flaxseed crackers too 🙂
