I added milled flax seeds as I like their texture in ‘bread’-y recipes; could they of caused the lack of rising? I’m sorry, but I did not weigh the bread so I cannot give you the nutrition per 100 g. There’s a good (free) nutrition calculator on the website sparkrecipes.com that you can use. I wish I could prepare this recipe for my beloved mum next Sunday (I can imagine she won’t even notice that it’s a low carb recipe! She’s always so skeptical to these kind of recipes), and share a cinnamon roll with her, but unfortunately I struggle with dairy. I’d think to substitute butter with ghee (the only dairy product I consume without problems), cream cheese with coconut cream (adapting the amount, should be enough reducing 1/3), but what about mozzarella? The best part about this bread is that it makes it so much easier to eat a low carb diet. Yes, there are some savage beasts (joking) that don’t miss bread at all and are happy to just eat bacon seven times a day, but if you’re anything like me, bread was a staple of your diet growing up and you still have a look of yearning in your eyes when they drop that bread basket in the middle of the table at family dinner. For Jessica – You can use any of the sweeteners appropriate for keto recipes. (Xylitol has a higher glycemic index.) I do not understand why recipes always call for a specific low carb sweetener – unless it is because whoever posted the recipe gets a commission if you buy the product they recommend. As a matter of fact I have a conversion chart for Natural Low Carb Sweeteners that came from Wholesome Yum!

But since I’m on a Keto way of eating, I had to find an alternative. The filling is perfectly fine and I did not have to use any substitutes. The dough however, was my problem. Few days ago, I found a Keto empanada recipe and it took me back to my trip to Spain last summer and I had 2 empanadas and that reminded me of karipap. So after some research, I decided to use a Keto empanada dough recipe but fill it with dry mince meat curry to make Malaysian karipap. I was a little hesitant because using a cheese dough recipe for karipap as it seemed like an abomination to karipap, but after I had my first bite I can safely say, IT’S DAMN DELICIOUS! You can’t even tell that it was made from cheese!

Curry puffs or as we call it, Karipap is a comfort food for Malaysians. Well, any Malaysian food is comfort food to us. 🙂 Karipap is also known as epok-epok and is quite similar to Empanadas. Karipap is a dough stuffed with dry curried minced meat or sardines and then fried. Some add a quarter of a hard boiled egg in it. On a regular day, I would make Karipap using ready made puff pastry as I don’t have a good hand with dough ( I always over handle it). Hi Suraya…..stumble on yr site while surfing for healthy oils as i make my own oils namely coconut, peanut, sunflower and flaxseed….own consumption and selling to close relatives and friends. Since my husband’s episode of ” heart attack” few years ago, i’ve started realizing that our staple diet among malaysians are full of sugars, fast food and carbs. The more i research the more I’ve come to realize that the main ingredients are so full of preservatives, colorings and additives….This keto diet that i’ve come across so frequently nowdays has made me thinking of trying it but with the mentality especially for asians….rice and flour is a must have on our dinner tables including my husband….i can only wonder.
