Dear Darlene Hi,There are many keto bread recipes online,this one caught my attention owing to its promise of not smelling eggy. That claim holds true to a large extent. I used baking powder instead of xanthum gum but even then the texture was good .Overall a great recipe which I hope and continue to improve. However I am confused about the net carbs in the nutrition box. As per my understanding net carbs are total carbs – sugar – dietary fiber which in this case will not be logical. Can you pls advise the net carb per slice as per the recipe. Thanks a lot.
Hi Suraya…..stumble on yr site while surfing for healthy oils as i make my own oils namely coconut, peanut, sunflower and flaxseed….own consumption and selling to close relatives and friends. Since my husband’s episode of ” heart attack” few years ago, i’ve started realizing that our staple diet among malaysians are full of sugars, fast food and carbs. The more i research the more I’ve come to realize that the main ingredients are so full of preservatives, colorings and additives….This keto diet that i’ve come across so frequently nowdays has made me thinking of trying it but with the mentality especially for asians….rice and flour is a must have on our dinner tables including my husband….i can only wonder.

I just started the keto diet and being Malaysian like you its so hard to give up the good ol Malaysian carb laden food like the karipap(which is my fav). So stumbling on to your blog is heaven sent. The texture of this pound cake is very dense and rich. I don’t doubt that you’d be able to easily fool someone who is not following a keto diet plan. It tastes just like a flour based pound cake. It’s sweet enough without being overly sweet. If you want to add some more sweetness to the loaf, I’d suggest a very small amount of stevia instead of adding more erythritol.
Generally, I have found that it is possible to leave out xanthan gum in recipes. It will make the end result a little more brittle/less sturdy. Xanthan holds things together, which helps when you’re baking without gluten. So, you may not be able to slice super thin slices. And you should definitely not even think about touching you bread while it’s still warm. If you have chia seeds, you could consider replacing the xanthan with chia which you have ground into a fine powder.

Recently bought the Panasonic automatic bread machine .will appreciate if you can advise the time I need to bake the bread as there is no keto recipe mentioned. The gluten free recipe using 1 egg & 1 egg white with potato starch , xanthum gum and milk powder , vinegar and butter is prescribed for 4 hours. Oh just about everything- ice cream, cheese cake (although had to give some heavy cream in this), cheese dip, chocolate-cheese mousse etc. I cook it with chicken and spinach too, but I was talking about non-traditional uses like the ones above. I’ve recently started using it with mayonnaise to give it a lighter consistency because my mayo seems to thicken too much. However, you cannot make VCO from the store bought cream, you would need fresh santan to do that.
Hi Mark, the nutrition box states 1 serving (slice) out of 12. SO, if you wanted to calculate the nutrition for the entire bread, you’d just have to multiply it by 12. I’m sorry, but I did not weigh the bread so I cannot give you the nutrition per 100 g. There’s a good (free) nutrition calculator on the website sparkrecipes.com that you can use. Or download the KetoDietApp, it also has a good one. Glad you like the bread though!

This recipe is perfect. I did half a batch and made six rolls. I used the correct amount of almond flour simply because I didn’t have the nuts in my pantry. These rolls are perfect and moist. I also added some pieces of chopped apple as a treat because it’s apple season and my goal was low carb not Keto. I’m so happy I found this recipe. With winter coming this will be a great treat.
